Storage Tips for fresh greens

I love opening the farm box every Saturday and pulling out the fresh greens. I cook my favorite ones on the weekend when I have more time to cook, but then I do keep some for later in the week. I found some tricks to make sure the greens are as fresh even later on. You do not want greens to spoil in your fridge before you get to use them!  

Your greens can last!  

Here is my storage tips -

  • Wash the greens with water and baking soda (optional).  Normally soak for 10-15 minutes.

  • Drip dry in a rack for 10-15 minutes

  • Then gently pat dry with a cloth towel and roll them in the towel.  They should not be dripping with water when you roll them in the towel

  • Store in a fridge container or drawer. The moisture with the dish cloth or towel covering it  keeps the greens fresh.

  • Also if greens dry out, soak in a bowl of water for 5-12 hours. They will perk up.

  • Always separate the root vegetables from leafy greens or the root veggies will absorb their moisture.
