Zucchini Salad
The fresh zucchini from the Tera Farm store made me want to try using it in a different way. I thought of making a quick zucchini salad. I was so happy with the end result!
Ingredients
- 2 zucchini’s - finely sliced
- Handful of sunflower seeds
- 2-3 leaves of lettuce - chopped up
- ½ a peach - sliced
Lemon dressing
- ¼ to ⅓ cup olive oil
- Juice of ½ a lemon
- 1 garlic pod
- 1 teaspoon mustard
- ½ teaspoon honey
- salt and pepper to taste
I sliced the zucchini out finely, added some of the lettuce from the farm and some sunflower seeds (pine nuts would have been awesome but I didn’t have any) and lastly added sliced peaches as the color just looks amazing against all the green.
I then made a lemon dressing and drizzled it on top of the salad before tossing it. It turned out so so good!
