The Mindless Smoothie

We all have those days when we are blank in the head about what to eat or make. Especially through these crazy times and with the amount of cooking I have done (probably the most at a stretch in my entire life), I call this recipe the mindless smoothie.

Throw in a banana, berries, purple kale and a celery stick with the leaves and blend with water...... and you got yourself a smoothie!  

Ingredients:

  • 1 banana

  • handful of berries (strawberries, blackberries, blueberries, raspberries)

  • purple kale (less than a handful)

  • 1 celery stick with leaves

  • half cup water 

Variation: Same recipe as above, but this time I wanted more texture to it, so I made it thick (used less water than the recipe above)  and put it in a bowl. 

I added some granola, almonds, walnuts and flax seeds and got just what I wanted.

The best part of it all, my kids want to eat the same thing because what’s not to like about it and they have no clue about the beautiful greens that have gone into it :). We are all loving the deep burgundy color of the blend.
