Braised Swiss chard
I have been vegetarian since I was pregnant for the first time and my children and grandchildren have never eaten fish or meat. So we have a lot of fun with vegetarian cooking, and are now tending towards vegan as much as possible.
This is what I did with the gorgeous swiss chard in the Tera Farm boxes.
I washed it, and chopped up the stems and leaves separately.
Fried some garlic in oil for about 30 seconds, then added the stems.
Stirred them about for a bit, then added the leaves and the water clinging to them. Added salt.
Let them cook for about five minutes, stirring from time to time, until it all seems cooked. I added a little more water as needed.
Then I mixed in some cranberries, some chili pepper, and a little soy sauce and cooked them for a couple of minutes
Lastly I sprinkled chopped/sliced Belgian endive and toasted pine nuts on top.
It was pretty good, but I credit the farmers for that!
