Agretti-broccolini pasta

I had just learned about Tera Farm and was excited to place my first order. The agretti was one of the first items I came across. I was curious, as I eat a plant-based diet and am always looking for new veggies. But what in the world was agretti? A quick google search revealed an interesting sounding green which I’m glad I decided to try. Before cooking it though, I had to look up some recipe ideas. While I didn’t find an exact one to use, I got the idea that blanching might be a good way to cook it, and that it might go well with pasta … so I improvised and ended up with a simple yet delicious dinner! As long as agretti is available, I plan to make this a weekly menu item in my home!

Ingredients

1 bunch Agretti (de-stemmed AFTER blanching)

½ bunch Broccolini (or more as desired)

1 (or more) clove Garlic

1-3 tsp. Coconut aminos

Pink or sea salt to taste

1/3 - 1 tsp. oil for sauteing

Pasta of choice

Black olives, chopped 

Lemon Garlic sauce 

(all measurements are approximate, adjust to your liking)

¼ onion (red or yellow)

1 Tbsp extra virgin olive oil

2-3 Tbsp. lemon juice (or lime juice)

Garlic granules (or fresh garlic)

Pink salt

Method

Rinse and blanche the agretti for 3-4 minutes, then de-stem it.

Sauté (I used < ½ tsp coconut oil) the agretti, broccolini, garlic, coconut aminos and pink salt for 2-3 minutes. Add to pasta with black olives.

Blend all the sauce ingredients together till liquefied.

Toss the pasta and vegetables with lemon-garlic sauce (or other sauce of your choice).
