Save those Beet greens
Beet greens, the leafy tops of beets, have 50X the antioxidants of carrots and are the richest food source of betaine, a phytochemical that supports the liver and reduces inflammation. See more here
So - do not throw those beet greens away. Here is a simple recipe:”
Cut beet greens (from 3 beets) into thin strips , include stalk if tender.
Chop 1 small onion fine.
Put 1 - 2 tbsp ghee and fry onions till brown (3-4 minutes).
Add beet greens, sprinkle some salt and let it cook.
Note - use less salt since the greens require very little salt.
