Save those Beet greens

Beet greens, the leafy tops of beets, have 50X the antioxidants of carrots and are the richest food source of betaine, a phytochemical that supports the liver and reduces inflammation. See more here

So - do not throw those beet greens away. Here is a simple recipe:”

  • Cut beet greens (from 3 beets) into thin strips , include stalk if tender.

  • Chop 1 small onion fine.

  • Put 1 - 2 tbsp ghee and fry onions till brown (3-4 minutes).

  • Add beet greens, sprinkle some salt and let it cook.

Note - use less salt since the greens require very little salt.

Additional note from Sheena : For the Instant Pot folks - beets cook perfectly in the IP, set them over a cup of water on a colander, and for larger beets, cook on Manual High for 15 mins. See photo of cooked beets waiting to be peeled sitting next to their greens that are washed and ready to cook . I got 2 different dishes out of my bunch last week.
