The 5-minute Zucchini - Tomato Salad

The zucchinis I received from the farm look so delicious. Recently, we are enjoying eating zucchini raw and honestly my kids like it better that way - they think it’s a cucumber. The red tomatoes look beautiful and are so sweet at this time of the year; they are always a perfect addition to any salad. I am all about the colors and the presentation. I used cherry tomatoes, but you can use any type.  

Ingredients

- Half a zucchini 

- Handful of cherry tomatoes (or use any other type)

- Olive oil to taste

- Salt, pepper to taste 

- Half a lemon

- 8 -10 mint leaves

I sliced up the yellow zucchini (you can use any type) and cut the cherry tomatoes into halves, added olive oil, rock salt and pepper and squeezed half a lemon and topped it with some mint leaves from my backyard. This was another salad that was a hit at my house!
