The Kale and More Salad

One of my meals everyday is a salad - it is a great way for me to get in an ample amount of vegetables and it is now an addiction for my body. I crave it on the days that I skip it. 

A salad is about a mixture of ingredients which add a variety of taste and texture - some crunch, some sweetness have to be a part of the salad.

This salad was inspired by the fresh kale in the farm boxes - our family has suddenly started eating a lot of kale!

Ingredients
This is a flexible list, just about anything in the farm box works since it is so fresh

  • 2 cups of finely chopped kale or kale/chard combination.

  • 1 handful sliced radish

  • 1 handful sliced cucumber

  • 1 handful sliced red cabbage

  • 1 handful of broccoli slaw (cut broccoli stalk)

  • Some grated carrots

  • 2 tbsp. sunflower or pumpkin seeds

  • 2 tbsp. raisins

  • 2 tbsp. chopped nuts - walnuts or pecans are my favorite.

  • 1 tbsp. lemon juice

Method

Start with 2 cups of finely chopped kale or kale/chard combination.

Massage 1 -2 tbsp. olive oil with your hands for about 30 seconds.
This gets rid of the bitter taste of the kale.

Then add in all the rest of the ingredients one by one. 

Mix well and enjoy!
