The Wonders of Cabbage

According to WebMD, “half a cup of cooked cabbage has about a third the vitamin C you need for the day. It also gives you doses of fiber, folate, potassium, magnesium, vitamins A and K, and more.”

Mexican Coleslaw

Coleslaw in general is a great use of cabbage.  It’s got a great crunch and loads of versatility from adding to sandwiches to a side dish.  Spicy or mild, it’s all good.  My friend Nita, who is an awesome cook, recommends this recipe.

Colcannon Potato Soup

This soup packs a healthy AND tasty punch with cabbage, leeks and kale.  I really like this recipe from Elise Bauer at Simply Recipes.   I make some substitutions when it comes to cream and all the butter (almond/coconut creamer and half olive oil) and it’s still amazing.
