Three ingredient bok choy stir fry
The bok choy in the farm box is so fresh that I was inspired to look for recipes and understand the art/skill of making the perfect stir fry to showcase this vegetable. A few hours of watching youtube videos, and several experiments over the weeks (Yes, I always order bok choy), I think I have a simple recipe that works! The number of ingredients is small to keep the focus on the bok choy. No heavy sauces!
Three Ingredients
One medium Yellow Onion - sliced
1 bunch of bok choy (Slice the bottom to separate the vegetable, soak in water or wash each leaf separately, there can be dirt trapped between the leaves since it grows close to the soil).
I slice through any thick base leaf once and keep smaller ones whole.One inch of fresh ginger - peeled and sliced thin
Method
Add 1 tablespoon of oil at the bottom of a large pan/wok. I like using coconut oil for this recipe, it makes it more special.
When the oil has heated, throw in the sliced onion, bok choy and ginger and stir fry carefully a few times (3 -4 mins max - till you see the greens wilt, but no more). Do not overdo this - you want to keep the stems crunchy.
Shake on some salt and pepper and serve.
We love eating it with rice. Or usually we eat it plain !
