Breakfast Cake
Here is a fun alternative to your daily breakfast cereal. Cake for breakfast may seem like a dream for every child but enjoy this exquisitely moist cake with the goodness of apples, carrots, nuts and warm spices.
Ingredients
½ cup dried cranberries
1 orange
1 cup almond flour (or coarse ground almonds)
1 ½ cup whole wheat pastry flour
½ cup brown sugar
2 tsp baking powder
1 teaspoon cocoa powder
½ teaspoon cloves powder
½ teaspoon cinnamon powder
½ teaspoon ginger powder
¼ teaspoon salt
2 apples, grated
1 carrot grated
¾ cup oil
3 eggs
1 teaspoon vanilla extract
Zest of one orange
Walnuts to garnish
Method
1. Preheat the oven to 350 degrees and line a round cake pan with wax paper.
2. Carefully zest the orange and keep aside
3. Place cranberries in a bowl and squeeze the juice of an orange on it. Keep aside
4. Grate apple and carrot into a large bowl
5. Mix flour, baking powder, cocoa powder, spices and salt well and pour into the large bowl
6. Blend egg, oil and sugar and vanilla extract in the blender for 2 minutes.
7. Mix the wet ingredients with dry ingredients. Add the orange zest and cranberries with the juice and blend with spatula
8. Pour into cake pan and garnish with walnuts
9. Bake at 350 for 35-40 minutes till the toothpick comes out clean
Serve with a bowl of fresh oranges and a cup of yogurt to make a delicious breakfast to perk up your morning or enjoy it with a cup of tea in the afternoon

Note:
If you are keen to make it gluten free, you may substitute wheat flour with rice flour
Please replace the almond powder with flour if you want a nut free cake.
