Creamy Pasta with Crispy Mushrooms

The Tera Farm box mushrooms were so lovely I just had to buy them but when they arrived (so fresh and beautiful, if a mushroom can be beautiful!) I didn't know what to make with them. I suddenly remembered that a Tera Farm volunteer had texted a recipe a few days earlier. It was a pasta dish so I thought there was a slim chance my middle schooler (who is an extremely picky eater), and my husband (who isn't a fan of mushrooms) might even like it. But it looked really tempting so I still decided to try it.

The recipe was quick and easy! I didn't have any parsley so at the very end, I added about a cup of frozen petite peas instead for color. I used one entire container of shiitakes and one of oyster mushrooms. The end result was delicious! It was creamy, lemony, and interwoven with the yummy Tera Farms organic mushrooms.

Did my middle schooler like it? She didn't like the lemon taste. Did my husband like it? Yes!!! He ate a big bowl of it the night I made it and then another big serving a couple days later. Did I love it? Absolutely!!! Here is the recipe if you'd like to give it a try:

Hope you enjoy it as much as we did!
