Citrus and Fennel Salad

The fennel in my organic produce box got me really excited so I went searching for some new recipes to try it. I came across this recipe that sounded so refreshing with the citrus and fennel that I just had to make it! Luckily the ingredients weren’t hard to find and I had my delicious salad to savor in no time at all :).

My friend who is not as good at following recipes tried it out as well, but she skipped the olives , radish and the honey but served it topped with a nice chunk of grilled Salmon. She added a small topping of cut up Fennel fronds. She said it worked really well - I think this fresh fennel is the secret.
