Beet Halwa
Halwa, in India, is almost like comfort food. It’s warm and sweet and delicious! And because it is so comforting to eat some halwa, people have figured out ways to make it with many different ingredients. While the main ingredient to make the halwa might change from wheat to lentil to different vegetables the comfort and lip-smacking factor never changes.
The red beets in my Saturday’s box reminded me of a childhood memory of eating beet halwa a long time ago. My mother used to lovingly make beet halwa for us. With the rain falling from the sky, it seemed like the perfect time to make some warm and nourishing comfort food - halwa. Hope you enjoy making and eating it as much as I did.
Ingredients
2 beets - peeled and grated - approx 2 cups
2 cups shredded coconut
1 cup sugar
1 Tbsp ghee (clarified butter)
Directions
Add the grated beets, shredded coconut and the sugar to a pan.
Cook all of them together, on medium heat, for about 10-15 minutes till the beets are cooked.
Add the ghee and stir a few times till well blended. Halwa is done.
Serve and enjoy!
