Thai Broccoli Soup - using our farm fresh Broccoli

I have been a long time fan of good Broccoli Soup, the very simplicity of making it and the delicious warmth was always a hit at home. However we got a bit bored with it, until now. When we got the organic broccoli in our fresh farm produce box this week, it was clear we needed a twist to highlight the ingredient.

Looking for recipes for hours to be inspired, I chanced upon this site and was rewarded in multiple ways.  The color of the soup pulled me in. The same simplicity and warmth with the delicious broccoli and a spicy twist. I decided to make it using my farm fresh Broccoli and it really worked!

I highly recommend making the peanut chili crunch. https://www.feastingathome.com/peanut-chili-crunch/ as the topping, it lifts the soup and creates bursts of spicy flavor. 

Both the broccoli and the tasty onions are from produce from the farm , lemongrass from my backyard, everything  is organic, everything is delicious.
